Sourdough contains gluten, yet it’s often well-tolerated by individuals with IBS, gluten intolerance, or gluten sensitivity. This is because the sourdough fermentation process partially breaks down gluten, making it more digestible. Consider sourdough as low in gluten rather than completely gluten-free.
